In Koskinou it’s easy to get organic vegetable’s from our local corner shop as they only sell what they produce from their own garden. You of course will know where your own local organic store is to buy to buy these low calorie vitamin giving produce. The most important trying is the vegetable’s are fresh, so that means using what the seasons have to offer.
The best thing about this recipe is that there are no fixed rules or amounts which means the dish will be slightly different from time to time.
Recipe
Fresh vegetables (approx 1\5 of the whole)cut into cubes.
3 to 6 garlic cloves thinly sliced.
Salt and pepper.
Place these on a baking tray with a cup of olive oil then mix. Garnish with rosemary and oregano branches , place in the oven at 180c for 45 minutes. The vegetables should be cooked but firm. Serve with a Greek cheese made from sheep’s milk, feta or yoghurt. If it’s possible use local village bread and olives, crowned of with a glass of the table wine from the area.
